Saddle Creek Breakfast Club
Breakfast spot in Countryside Village in a hot-pink dining room with a neon sign and bunny-themed wallpaper. The menu leans Mexican-inspired and includes brunch cocktails, and it also runs a Taco Tuesday dinner. Open daily from morning to early afternoon.
Saddle Creek Breakfast Club is a breakfast spot in Countryside Village at 8734 Pacific Street. It began as a small dining room on North Saddle Creek Road in midtown Omaha and moved west in 2024 into a former Starbucks building near 87th and Pacific. The owner and chef is Chase Thomsen, and long-time chef Maria Batista helped shape the Mexican-inspired dishes.
The new room seats 65, up from 33 at the old location. Designed by Niki Nichols Thomsen, it is decorated in hot pink, with a pink neon sign in the window and wallpaper of pink bunnies and celebrity photos. Flatwater Free Press called it trendier than the original room. The menu centers on breakfast: Dos Salsas de Maria, a classic Mexican breakfast, a steak and egg burrito, a Benedict-style ham and eggs on toast and a Cali club croissant. Lox toast is one of four shareable toasts, and a Piedmontese burger and a beet salad cover lunch. Drinks include espresso martinis and a Bunny Mary.
It is a good pick for a weekend brunch or a Taco Tuesday dinner with street tacos and margaritas. Expect a wait at busy times; the restaurant texts guests when a table is ready, which leaves time to walk around Countryside Village.
